Results showed that high kernel weight and starchy kernel content were associated with a higher milling yield. Also, protein content had a negative correlation with test weight.

Results indicated that the DBA Lillaroi produced the highest milling yield under Australian conditions. A managed air stabilization system was implemented to increase the relative humidity and improve the overall product quality.

Optical sorters were used to remove foreign seeds and ergot-infected durum kernels. A mixograph was then used to measure dough properties. Both techniques had reproducible results and provided a reliable method to assess the quality of durum wheat milling.

The results indicate that durum wheat with high protein content gives an al dente texture and ensures firm pasta. High-protein durum wheat is used to produce a variety of food items.
